Jazz guitars, are also known as hollow-body electrics, or in some cases arched top acoustics. They generally have a carved top and back, a trapeze tail piece that runs the string tension to the end block of the guitar for great structural stability, while having the bridge only hold in place by friction of the strings and top. This system gives them decent acoustic tone, while still offering many of the benefits of an electric guitar. They also usually have f-holes along the sides of the top and have a set neck with a single tone block in the center of the body connecting the top and back together.
While many brands do variations on this general platform, they do tend to follow very similar patterns of design and features. Varying bridge style and pick-up type more than anything else.
Despite being called "Jazz" guitars, they are regularly used in genres as varied as bluegrass, folk, pop, rock, blues, country, and almost every other. They typically don't handle heavy distortion as well as semi-hollow or solid body electrics though, so they don't often get used in hard rock or metal.
Their warm and dynamic character makes them ideal for genres where an instruments expressiveness is important. That's where jazz, blues, and a lot of country and folk musicians really find these guitars an excellent choice.
